Crispy Chicken with Mashed Sweet Potatoes & Green Beans

Crispy, crunchy hen breasts aren’t too outrageous, in the event you pan-fry them in an inexpensive amount of high-quality olive oil. Serve with mashed candy potatoes and tender-crisp inexperienced beans for pure comfort.


1 lb (500 g) sweet potatoes, peeled and reduce into chunks

Place the hen breasts between 2 sheets of plastic wrap on a chopping board. Using a rolling pin, pound to a good thickness. Discard the plastic. Sprinkle the hen on each side with salt and pepper. Pour the breadcrumbs onto a plate, and place a clear plate subsequent to it. Working with one piece of hen at a time, coat with breadcrumbs, pressing gently to help them stick. Repeat with all the hen, stacking the coated pieces on the clean plate.

In a big nonstick frying pan over medium-high warmth, warm the remaining 2 tablespoons olive oil. Fry the hen, turning as soon as, till golden brown, about 3 minutes per aspect.
