Skip the drive through and the flamboyant sit-down restaurant—this beef burger recipe delivers a healthy patty that’s just as massive on taste. The secret’s not what you’re taking out, however what you set in. Think: fragrant garlic, meaty mushrooms, Worcestershire sauce, and a crushed egg. INGREDIENTS

2 tablespoons extra-virgin olive oil
eight oz (250 g) mushrooms, sliced
1 clove garlic, minced

INSTRUCTIONS

Transfer the mushrooms to a food processor and pulse till finely chopped, 8 to 10 pulses. (Alternatively, you’ll be able to transfer to a board and finely chop by hand.) In a large mixing bowl, combine the chopped mushrooms, ground beef, Worcestershire sauce, crushed egg, and ½ teaspoon salt, and season generously with pepper. Return the sauté pan to the warmth and warm the remaining 1 tablespoon olive oil. Add the patties and sear till browned on the primary aspect, 4 minutes.
