Arugula Salad: Mango, Macadamia, Avocado.

(Updated) This Arugula Salad recipe has been a fan-fave since 2011! It is a private fave as properly. Tropical flavors of candy mango and salty, crunchy macadamia nuts mingle with spicy arugula lettuce and buttery avocado. This simple-ingredient salad is so flavorful that it barely even needs dressing. But if you want to add some, I feel a drizzle of excellent additional virgin olive oil and lemon juice is simply good. (Dressing suggestion in the recipe.)

I really like this salad on a busy day as lunch, or as a dinner salad topped with tempeh bacon or skillet chickpeas.

Some ideas for this salad:

– Use a mango that’s good and ripe. You want the candy juices to actually take in into the arugula – and assist soften it a bit.
– Use macadamia nuts which might be roasted AND salted. That salt really goes a great distance in this salad. You can add them entire, or chop them up into macadamia nut bits.
– If you just can’t find macadamia nuts – they are often onerous to seek out typically – use salted and roasted cashews as an alternative. Those are the perfect sub, I have found. Chopped Brazil nuts work properly too.
– Be generous with the avocado! (Good recommendation for any recipe, actually…)
– If your arugula is just too giant or long/stringy, escape your culinary shears and reduce the arugula up.

Arugula, Avocado, Mango, Macadamia Salad

This easy and flavorful salad combines salty, crunchy macadamia nuts with candy mango, avocado and arugula. Vegan.

Ingredients

  • 1 giant mango, cubed
  • 1 avocado, sliced
  • 1/2 – 1 cup macadamia nuts, salted and roasted (chopped or entire)
  • 5-6 cups or arugula
  • a couple of pinches of pepper – salt non-compulsory
  • Optional add-ins: onion, carrots, hemp seeds, chickpeas, tempeh bacon..
  • Simple Dressing Suggestion:
  • 1 lemon, juiced
  • 1 Tbsp additional virgin olive oil
  • 2 tsp Dijon mustard
  • 1-2 tsp maple or agave syrup

Instructions

  1. Whisk together the optionally available dressing, put aside.
  2. In a large mixing bowl, toss the salad components together. Add dressing as desired. Toss once more.
  3. Serve immediately.

Yield: 2 servings

Prep Time: 00 hrs. 15 minutes.

Total time: 15 minutes.

One thing I brought back with me from the Dole Salad Summit, was the inspiration to make this Arugula Salad. It combines crisp, zesty arugula leaves with roasted macadamia nuts, freshly diced mango and tender cubes of avocado. A simple combo value making an attempt. It simply might rescue dinnertime (because it did mine!)..

In part three of my wrap-up posts (part 1 – half 2) you will get Dole’s take on “Salad 101” – and for us bloggers, that meant tasting a couple of salads. This vegan arugula salad that I tasted on the Dole Fresh Vegetables headquarters actually gained me over. So I re-made it final night time – salad-licious.

Here’s to the salad that saved dinnertime.
