Hope you all had a cheerful, chill, fun long vacation weekend! My cooking schedule has been crammed with straightforward, hearty breakfasts adopted by smoothie or sandwich/toast lunches and both summer time-y dining out or a simple dinner. Lots of massive salads to match the warmer climate and temper to not need to activate my oven until I am baking cookies.
Well this plant-based mostly Avocado Candied Nut Beer Brat Salad matches very nicely into that schedule. I have made this salad about 3 times now because I adore it so much! And there are plenty of ways to tweak the elements. But actually the particular elements are those quick candied nuts and the beer brats. I really like the cool meets toasty facet of this salad. Cool butter lettuce and fruit and avocado pairs with the toasty skillet-heat brats and nuts.
The Components to this salad:
– butter lettuce (or another leafy green)
– quick candied nuts (pecans or walnuts)
– skillet beer brats by Tofurky (may be tempeh bacon or another comparable ingredient)
– fruit: sliced peaches, mandarin oranges, grilled apricots…
– dressing of selection. I have been utilizing either Vegan Bleu Cheese (by Follow Your Heart) or my own DIY No-Honey Mustard Dressing.
..And that’s it! Super straightforward and so flavorful.
The salty, crispy-edges beer brat slices pair perfectly with the toasty-sweet candied nuts and sweet fruit. The cool butter lettuce mixture on the bottom layer. And in fact, buttery avocado slices to deliver all the things collectively.

Pairing Options. This salad pairs rather well with pizza, pasta or serve an enormous portion and use it as it’s own entree. Last night time we added some straightforward marinara pasta with vegan Parm on prime and it was perfection!
What’s Next for Summer? We are already in July, are you able to consider it?? Well, we already had a nice mini vaycay in Coronado California, which I have to do a blogpost about! And we’d do one other mini vaycay earlier than the summer time is through. But really guys, I am a fall travel-lover. I really like beachy getaways in summer time months, however since I already stay in LA, land of seashores and (often) plenty of sunshine, I assume i get extra enthusiastic about chilly journey months! Less tourists and off-season rates! I wrote about off-season journey to Croatia on this publish.

I am also doing plenty of screenwriting. Polishing up my scripts that I started in my UCLA program, and I am staring on a number of new tasks as properly. I’m so excited for this screenwriting journey. It is such a special craft – creating stories and characters with hopes to convey them to life on a display.

This flavorful, plant-based mostly salad consists of avocado, beer brats, candied nuts and recent fruit. All on a cool butter lettuce mattress.
- 6 cups butter lettuce
- dressing of coice – to style (vegan Bleu Cheese, ranch or honey-mustard works nicely)
- 1 serving fruit (mandarins or sliced peaches)
- 1 small avocado, diced
- 1 beer brat (Tofurky), sliced – or attempt tempeh bacon
- 1/2 cup (walnuts or pecans)
- 2 Tbsp maple syrup
- pinch of salt
- black pepper to style
- EVOO for pan – about 2-3 tsp
- Toss the salad together with your dressing and avocado, set aside.
- Warm a skillet over high warmth. Add a splash of EVOO. Add the beer brats and prepare dinner 2-3 minutes on all sides or until frivolously browned.
- A minute earlier than they are executed, add the nuts to at least one aspect of the pan. Toss a bit to toast. Add the maple syrup over prime the nuts. Toss a bit to coat. Allow to simmer on low warmth for a minute, then turn off the heat. As the nuts cool they’ll get a bit stickier. Add a pinch of salt to the nuts.
- Add the salad to serving bowl(s). Then prime with the fruit, beer brats and nuts.
- Add black pepper over prime to serve. Enjoy!
