A sweet reminder that a healthy substitution does not equal deprivation. This recipe is ridiculously easy and made with elements you’re more likely to already have in your pantry. Blend up a batch and hold it in the freezer for a healthy warm climate dessert. Or serve it in a cone at your kiddo’s next birthday celebration.
4 giant bananas, broken into small chunks, and previously frozen
1/4 cup canned lite coconut milk
1/4 cup 100 % pure peanut butter, unsweetened, no added salt (creamy or crunchy)
pinch of sea salt
1 tablespoon maple syrup
1/4 cup mini darkish chocolate chips
Place the frozen banana slices and coconut milk within the bowl of a food processor. Blend until clean, stopping to scrape down the edges with a rubber spatula as needed. Add the peanut butter, pinch of salt, and maple syrup and blend once more to mix. Stir in chocolate chips on the finish.
Transfer to a container with a lid and freeze until strong. Serve in a cup or a cone anytime—heck, you possibly can even eat some with breakfast!
