Dessert Recipe: Fudgesicle Bars with Date Caramel

Hot summer time days name for cool candy treats. These creamy “fudgesicles” are so decadent that no one will consider that it’s not dairy and that they include only 5 grams of sugar per serving. INGREDIENTS: 

For the ice cream base:

2 (13- to 15-ounce) cans coconut milk, basic or full-fat

3 tablespoon honey or maple syrup

¼ teaspoon salt

2 tablespoons cornstarch (or 1 tablespoon arrowroot starch)

1 ½ teaspoon vanilla extract

5 tablespoon cacao powder 

For the date caramel:

1 cup of dates, pitted

1 cup of scorching water

1/2 teaspoon sea salt

1/2 teaspoon vanilla extract

2 tablespoons peanuts, flippantly salted 

Popsicle molds

INSTRUCTIONS: 

In a medium saucepan, combine the coconut milk, vanilla, starch, honey, and cacao powder and heat to only under a simmer, approximately 1 to 2 minutes. Whisk until mixed, then set combination aside to cool to room temperature.

Once cool, pour into your popsicle molds and freeze until strong. Freeze for at the very least 4 hours. 

When you’re able to make your date caramel topping, start by boiling scorching water. Pour boiling water over dates and soak for 10 minutes. Drain and reserve your soaking water.
